Equipment
- Mixing bowls
- 15-inch cast iron skillet
Ingredients
- 5 tablespoons salted butter, cubed
- 2 cups self-rising cornmeal mix (such as Pearl Milling Company)
- 1 tablespoon granulated sugar
- 3/4 teaspoon kosher salt
- 3 large eggs, room temperature

- 1/3 cup milk (whole preferred; 2% works)
Instructions
- Preheat oven to 400°F and place rack in the middle position.

- Once oven is preheated, add butter to cast iron skillet and place in oven until melted, about 10 minutes.
- Whisk cornmeal mix, sugar, and salt in a medium bowl.
- In a large measuring cup or medium bowl, whisk eggs and sour cream/milk mixture; stir wet ingredients into dry ingredients.
- Carefully remove the hot skillet. Swirl butter over the bottom and sides, pour remaining butter into the batter, and stir. Pour batter into hot skillet.
